Broccoli Salad is hands down one of my favorite side dishes. It’s fresh, quick, and easily made into a dairy free recipe by simply omitting the cheese.
This recipe takes a bit of prep work but it is SO good. It’s also pretty versatile. You can add whichever low carb veggies you’re in the mood for since the marinated Greek chicken is the star of the show. Pair it with homemade dairy-free tzatziki and you have a delicious, well rounded keto dinner.
Coffee is life. At least, I like to think so at 6am when my kids are harassing me for a hot breakfast. When I stopped dairy, I was hella concerned about what to use for creamer. Almond milk is too thin and cashew milk is a bit thicker but it takes a lot to get the consistency I want. My sister told me about this

This is one of the easiest low carb dinners I’ve ever made. I may have stopped eating dairy since I put this recipe together but I’m excited to try it with a vegan or goat cheese next time. It’s quick and uses only one dish. #Winning

I’m going to drop some truth on you guys. Before going low carb I freaking LOVED fried chicken. I don’t even know why I’m talking in past tense. I’m so excited to finally share my first recipe post with you guys! I used to be such a shitty cook. Dinner most nights was a raw veggie paired with some kind of meat or a box of whatever. Any sauces or additives were store bought and from jar or package. There were so many readily-available foods that I honestly though I didn’t need to learn how to cook actual recipes, using whole ingredients. When I switched to Keto (Low-Carb) it was quite a wake-up call.
