This is one of the easiest low carb dinners I’ve ever made. I may have stopped eating dairy since I put this recipe together but I’m excited to try it with a vegan or goat cheese next time. It’s quick and uses only one dish. #Winning
I’m going to drop some truth on you guys. Before going low carb I freaking LOVED fried chicken. I don’t even know why I’m talking in past tense. I’m sure I still love fried chicken. 4 months into my Keto journey, I decided it was time to try and recreate (somewhat) that salty crunchy goodness. I needed to make some low carb crispy chicken.
I’m so excited to finally share my first recipe post with you guys! I used to be such a shitty cook. Dinner most nights was a raw veggie paired with some kind of meat or a box of whatever. Any sauces or additives were store bought and from jar or package. There were so many readily-available foods that I honestly though I didn’t need to learn how to cook actual recipes, using whole ingredients. When I switched to Keto (Low-Carb) it was quite a wake-up call.
